Oyster Burritos

This recipe is perfect for a satisfying and flavour-packed burrito featuring marinated and oven-cooked oyster mushrooms. It’s easy to make and great for a casual meal or sharing with friends!
 

Ingredients:
 

For the Marinated Mushrooms:
 

200g oyster mushrooms

2 tbsp soy sauce

1 tbsp oyster sauce

1 tsp mixed spice or allspice

1 tsp cumin

1 clove garlic, minced

1 tbsp olive oil

Salt & pepper to taste
 

For the Filling:
 

1/2 cup quinoa (cooked)

1/2 cup rice (cooked)

1/2 red or green pepper (chopped)

1/2 cup sweetcorn

1 small onion (chopped)

1 tomato (diced)

1/4 cup grated cheese (optional)

A handful of lettuce leaves (shredded)

Juice of 1 lime

Fresh cilantro (chopped)
 

For the Sauce:
 

Your favourite burrito sauce, salsa or our favourite sour cream!


For Assembly:
 

4 large tortillas

 

Instructions: 
 

The Mushrooms:
 

Preheat the oven to 180°C (350°F).

Clean the oyster mushrooms and tear them into bite-sized pieces.

In a bowl, mix the soy sauce, oyster sauce, garlic, olive oil, mixed spice, cumin, salt, and pepper.

Toss the mushrooms in the marinade, ensuring they are well coated.

Spread the mushrooms on a lined baking tray and bake for 30-45 minutes, turning halfway through, until browned and slightly crispy at the edges.

The Rice:

 

Cook the Rice, Once done, set aside.


The Veggies:
 

Heat a little oil in a pan and sauté the chopped onions, peppers, and sweetcorn until soft and fragrant (about 5–7 minutes). Add salt and pepper to taste.
 

Assemble the Burritos:
 

Warm the tortillas in a pan or oven for a few seconds until soft and pliable.

Lay each tortilla flat and spoon a layer of rice, sautéed vegetables, and oven-baked mushrooms down the centre.

Top with diced tomatoes, shredded lettuce, grated cheese (if using), and a sprinkle of fresh cilantro.

Squeeze fresh lime juice over the filling and drizzle your favourite sauce over everything.


Wrap and Serve:
 

Fold in the sides of the tortilla, then roll it up tightly to form a burrito.

Serve immediately with extra lime wedges or salsa on the side.
