Grilled oyster mushrooms
Vegan

Total: 1 hour 30 minutes
Makes 2 steaks
Ingredients:
Stage 1 -
x2 Cluster Brown Oyster Mushrooms
3 tbsp Sunflower oil
1⁄4 cup water
Stage 2 -
soy sauce marinade.
4 tbsp Soy sauce
Cracked black pepper
Smoked paprika
Method:
1. Trim the ‘hay’/stem from the bottom of the mushroom, keeping it all intact in one piece.
2. Get cast-iron pan really hot and heat up 2 tbsp oil and swirl to evenly coat. Place
mushrooms stem side down, into the pan on the outer edge hot spots.
3. Press mushrooms with another cast-iron pan/heavy pot. Apply a little pressure until you
hear the sizzle. At this stage add 1⁄4 cup of water and let it steam a little and place the
cast-iron pan/heavy pot back on top to keep it pressed. Mushrooms will be releasing
liquid, leave the water to evaporate for a 2/3 of minutes.
4. Once halved in size, using thongs flip the mushroom round to cook the other side. Don’t
add any additional water at this stage. Cook for another 2/3 minutes.
5. While this is cooking – mix all of stage 2 in a bowl until well combined and place to one
side.
6. Once the mushrooms have cooked on both sides – using the tongs remove the
mushrooms from the pan and place into you soy sauce marinade. Allow it to marinade
in the bowl for at least 1 hour before using.
7. At this stage the mushrooms can be stored in the fridge for up to 3 days in a clean lidded
container. Not suitable for freezing.
8. Last 20 minutes of your marinating time– pre-heat the oven
on grill setting at 200c (Fan) / 375f convection and line a
baking tray with foil.
9. Place your mushrooms on the baking tray and grill for 4/6
minutes then flip and cook for a further 4/6 minutes.
10. Serve hot and enjoy!!
